On customs and recipes

Engawa describes how things are commonly done in Japan, from new year food to taking off shoes in the genkan, using ministries, local governments, museums and research as sources. Regions, families and generations differ, and a description here is not a rule anyone must follow. Food-safety and allergy information on packaged products, and the instructions of shrines, temples or local authorities, always prevail. Recipes assume ordinary kitchen hygiene.
